Vegetable Muffins


makes 6 muffins

2 eggs

25 ml milk
30 gr butter, melted
100 gr self rising flour
salt and ground pepper
150 gr vegetables, cutted (pepper, onion, potato, parsley, carrot, peas)

6 paper liners or butter


1. Preheat your oven to 180 C and line 6 muffin cups with paper liners or grease the pan.

2. In a medium mixing bowl, beat the eggs, stir in in the melted butter, milk, self rising flour, salt and ground pepper. Stir until smooth. Add the vegetables, stir until combined.

3. Scoop each muffin cup full with the batter.

4. Bake in preheated oven for about 20 to 25 minutes.
