Ingredients
- 60g softened butter
- 200g granulated sugar
- 1 tsp vanilla sugar
- 2 eggs
- 125g Greek yogurt
- 180g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tbsp cornstarch
- handful raspberries, frozen or fresh
- 2 tbsp granulated sugar
- 100g sliced almond
- 5 tbsp powdered sugar
Method
1. Preheat the oven to 175 C / 350 F and grease a pie or round cake pan.
2. In a mixing bowl, cream the butter, beat in the eggs. Beat until creamy. Add the sugar and vanilla sugar, cream for about 5 mins more. Add the yogurt and beat 2-3 minutes more.
3. Add the all-purpose flour, cornstarch, baking powder and baking soda. Beat until well combined about 2-3 minutes.
4. Pour the batter into the greased pan. Top with raspberries, sugar and sliced almonds.
5. Bake in preheated oven for about 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
6. Allow to cool completely. Sift some powdered sugar on top. Slice before serving.
