Crustless Mushroom and Chicken Quiche



1 onion, chopped
1 chicken breast, cooked and diced
200 gr mushrooms, sliced
handful spinach, frozen or fresh
ground black pepper
3 eggs
125 ml heavy cream
50 gr grated cheese


1. Preheat your oven to 180C(356F) and grease an 8x8" or 11x7" baking pan. Set aside

2. Add 1 tbsp oil to a skillet, sauté the chopped onion for 2-3 minutes. Add the mushrooms and sauté for another 2-3 minutes. Add the chicken and spinach heat for another 2-3 minutes. Season with salt and pepper. Set aside.

3. In a mixing bowl, beat the eggs, stir in the heavy cream ans season with more salt and pepper. Add the mushrom mixture and cheese. Stir until well combined. Pour the mixture into the greased pan. Bake in preheated oven for about 35 to 40 minutes.
*Can be frozen
