Tomato Cottage Cheese Tart | Episode 406

Ingredients

For the crust
  • 200g (2 cups) breadcrumbs
  • 5 tbsp olive oil
  • salt and pepper
For the ricotta filling
  • 400g cottage cheese
  • 40g grated parmesan
  • 2 eggs
  • handful basil leaves, chopped
  • salt and pepper
For the top
  • 6 medium tomatoes
  • 4 tbsp olive oil
  • 2 garlic cloves, minced
  • more basil leaves for serving

Instructions

1. Preheat the oven to 230C / 450 F. In a greased quiche pan or springform pan, toss breadcrumbs with olive oil,  salt, and pepper; press evenly into the bottom. Set aside.

2. In a small saute pan, heat 4 tbsp olive oil. Add the minced garlic cloves and heat for another 2-3 minutes over medium heat. Set aside. Slice tomatoes into thin slices. Set aside.

3. In a bowl, whisk the cottage cheese with Parmesan, eggs, and basil; season with salt and pepper. Spread over crust; arrange tomatoes on top. Brush with the garlic olive oil.

4. Bake until tomatoes are almost dry, about 35 to 40 minutes. Season with more chopped fresh basil.  Serve warm.
