Matcha and Pistachio Cookies | Episode 405

Ingredients
  • 75g unsalted butter, softened
  • 1 egg yolk
  • 80g granulated sugar
  • 1 tsp vanilla extract, optional
  • pinch of salt
  • 75-90g all-purpose flour
  • 1/2 tsp (2g) baking powder
  • 70g pistachio flour
  • 1 1/2 tsp (3g) match powder
  • about 20 whole pistachios

Instructions

1. Preheat the oven to 160C / 325F and line a baking tray with parchment paper.

2. In a medium mixing bowl, combine the softened butter, sugar, vanilla extract, and egg yolk. Add the pistachio flour and matcha powder. 

3. Add the all-purpose flour, salt, and baking powder. Knead until well combined. Add more flour if needed. 

4. Roll dough into 20 balls and place on the lined baking tray. Flatten each ball of dough and gently press 1 pistachio on each cookie dough.

5. Bake in the preheated oven until the edges of the cookies are lightly golden and the bottoms are lightly brown, about 20 minutes. Allow cooling for about 10 minutes before serving. 

*The cookies will keep in an airtight container at room temperature for up to 3 days.
