Ingredients

For the syrup
  • 280g sugar (1 1/2 cup)
  • 300ml water (1 1/2 cups)
  • drops of lemon juice
For the cookie dough
  • 50g soft butter
  • 1 egg
  • 2 tbsp powdered sugar
  • 1 tbsp semolina
  • 1 tbsp coconut
  • 50 ml sunflower oil
  • 1 sachet vanilla sugar (8g)
  • 2 tsp baking powder
  • 200g all-purpose flour
  • poppy seeds for coating
  • nuts for decorating (pistachios, walnut or hazelnuts)
Instructions

1. Make the syrup: Pour the water in a cooking pot and add the sugar. Cook them with mixing. Once it starts to boil, stir in the lemon juice. Boil for another 10 minutes over medium heat. Set aside.
2. Make the dough: In a large bowl, combine the egg and butter until smooth. Add the oil, powdered sugar, coconut, semolina, vanilla, and baking powder. Keep kneading with adding flour. Knead until smooth.
3. Preheat the oven to 180C (350F) and oil a baking tray.
4. Roll dough into walnut size balls. Flatten lightly with your hands, and roll in the poppy seeds. Place on the greased baking tray and decorate with nuts. Bake in preheated oven for about 20 to 25 minutes.
5. Remove from oven and pour the cooled syrup over the warm cookies. Let sit for at least 2 hours before serving.
