Ingredients

95g rice (1/2 cup)
300ml water
600ml milk (4 3/4 cups)
160g sugar (1 cup)
2 tbsp cornstarch + 50ml milk
1 egg yolk + 3 tbsp milk


Instructions

1. Preheat the oven to 180 C / 350 F.

2. Place the rice in a large saucepan with enough water about 300ml to cover it. Bring it to a boil and reduce the heat. Let the rice simmer gently until the rice is soft.

3. Add the milk and sugar to the rice. Bring it to a boil. Reduce the heat and let it boil for about 15 minutes.

4. Mix the cornstarch and milk. Stir into the rice mixture and continue stirring. When the pudding thickens, continue to stir and cook for about 2 minutes more. Remove from the heat and fill ovenproof dessert cups.

5. Mix the egg yolk and milk. Using a spoon, drizzle a small amount of the egg yolk and milk mixture into the center of each dessert cup. With the back of the spoon, swirl the egg yolk from the center to the edges so it spreads evenly over the top. Place the cups on a baking tray.

6. Place in oven and bake until browned for about 20 to 25 minutes. Remove from the oven and allow cooling for at least 1 hour. Place in the refrigerator before serving.
