Ingredients
For the crust
- 100 g quinoa, rinsed
- 1 cup of water
- 1 egg
- 1/4 cup goat cheese, crumbled
- 1 tsp garlic powder
- salt and pepper
For the quiche
- 1/2 head cauliflower florets
- 1/2 head broccoli florets
- 1 red pepper, chopped
- 1 onion, chopped
- 1 garlic clove, diced
- 3 tbsp olive oil
- salt and pepper to taste
- 4 eggs
- 1/2 cup milk or heavy cream
- 1/2 tsp fresh thyme leaves
- 1/4 cup goat cheese, crumbled
- salt and pepper
Instructions
1. Preheat the oven to 190 C / 375 F.
2. Bring the quinoa and water to a boil, reduce the heat, simmer until tender and the water has been absorbed, about 10 minutes. Remove from heat and let sit covered for 5 minutes.
Mix the quinoa, egg, crumbled goat cheese, garlic powder, salt, and pepper. Press into the bottom of a pie plate and bake for about 15 minutes.
3. In a skillet, heat 3 tbsp olive oil and saute the onion, red pepper, and garlic for about 5 minutes. Add the broccoli and cauliflower florets, saute for another 5 minutes over medium heat. Season with salt and pepper. Allow cooling for about 5 minutes.
4. Mix the veggies with the eggs, milk, thyme leaves, crumbled goat cheese, salt, and pepper.
Stir together until combined. Pour into crust and bake until golden brown and set in the center, about 30-35 minutes.
