Turkish Bulgur and Lentil Soup 'Ezogelin' | Episode 401

Ingredients
  • 1 Finely chopped onion
  • 1 tbsp butter
  • 3 tbsp olive oil
  • 1 tbsp flour
  • 1 cup red lentils
  • 1/4 cup coarse bulgur
  • 1/4 cup rice
  • 1,5 tbsp pepper paste
  • 1,5 tbsp tomato paste
  • about 8 cups water
  • 1 bouillon cube
  • salt to taste
  • 2 tbsp olive oil
  • 1,5 Tsp dried mint
  • 1,5 Tsp red pepper flakes

Instructions

1. Melt the butter and oil over medium heat in a large pot. Add the onions and fry until tender. Add the pepper paste and tomato paste, cook for another 2 minutes. Add the rinsed lentils, bulgur and rice. Cook for about 3-4 minutes. Stir in the flour. Add water and bouillon cube, and salt. 
2. Let the soup slowly simmer until the rice and bulgur are very soft and the lentils have fallen apart after about 20 minutes.
3. Heat 2 tablespoons of olive oil in a small skillet or pan. Add the hot pepper flakes and mint, and stir over the heat for a minute or two. Pour into the soup and let it simmer a few minutes more. If the soup seems too thick, add a little more water.
