Spicy Carrot Salad | Episode 334

INGREDIENTS

  • 8 carrots, peeled and sliced into thin rounds
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • salt
  • 1/2 tsp sweet paprika powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp ground black pepper
  • 1/4 tsp cumin
  • 1/2 tsp coriander
  • 400 ml water
  • 1 tbsp vinegar
  • handful parsley, chopped
INSTRUCTIONS

1. Heat 1 tablespoon olive oil in a deep pan. Add the sliced carrots and minced garlic. Cook for about 2 minutes over medium heat. Add the spices and salt. Cook for another 4-5 minutes. Add 400 ml water and bring to a boil over medium-high heat and cook until carrots are tender and water evaporates, about 20 minutes.
2. Transfer the carrots to a bowl and allow to cool for about 10 minutes. Stir vinegar and chopped parsley trough the carrot mixture. Refrigerate before serving.
