Turkish Lokma (Fried Sweet Dough) | Episode 330

INGREDIENTS

Dough:

  • 400 ml water, lukewarm
  • 7 g dry yeast
  • 1 tbsp sugar
  • 380 g all purpose flour
  • 1/2 tsp salt
Syrup:
  • 400 ml water
  • 450 g white sugar
INSTRUCTIONS

1. Start with making the syrup. Mix sugar and water in a pot and bring it to a simmer.
Let it boil for about 10 minutes. Remove from heat and allow to cool.
2. In a medium mixing bowl, combine the lukewarm water, yeast and sugar. Let sit for about 5 minutes. Stir in the flour and salt. Stir until smooth and shiny. Cover with plastic wrap and allow to rise for about 50 minutes.
3. Heat oil in a deep pot until boiling point and drop teaspoon of the mixture in it. Dip the teaspoon into the hot oil between each addition to prevent stickiness. The lokma puff up and rise to the surface within seconds. Turn them over and as they become pale golden all over -it only takes a minute- lift them out with a slotted spoon and dip in the syrup for about 30 seconds. Drain on a plate. Repeat with remaining batter and syrup.
4. Serve warm or cold.
