Potato Stuffed Turkish Pide Bread (Ramazan Pidesi) | Episode 544

 Turkish Ramazan pidesi recipe stuffed with mashed potatoes.

Ingredients

Dough:
  • 400 ml milk, lukewarm
  • 7g active dry yeast
  • 1 tbsp granulated sugar
  • 480g all-purpose flour + 4 tbsp 
  • 1,5 tsp salt
  • 4 tbsp olive oil
  • extra oil for your hands
To brush the top:
  • 2 egg yolks
  • 2 tbsp oil
  • nigella seeds or sesame seeds
Filling:
  • 5 medium potatoes, peeled and cubed
  • 1 tsp salt
  • pinch black pepper
  • 100 ml milk
  • 100g shredded cheese
Method:

1. To make the dough: In a large mixing bowl, stir together the lukewarm milk, yeast and sugar. Let sit for 5 minutes. Add the 480g all-purpose flour, salt and oil. Stir until well combined. Oil your hands lightly and knead the dough until smooth. Add the 4 tbsp flour if dough is too sticky. Oil the bowl, cover with plastic wrap and a clean kitchen towel. Allow to rise for about 45 minutes or until doubled in size.

2. To make the filling: Transfer the peeled and cubed potatoes to a medium pot and cover with water. Allow to a simmer and cook until the potatoes are soft enough to mash.
Drain the potatoes, add the milk, salt, black pepper and shredded cheese. Mash the potatoes until smooth. Allow to cool completely.

3. Line 3 baking trays with parchment paper.

4. Transfer the dough to a lightly oiled working surface. Divide dough into 3 balls.

5. Divide the potato filling into 3 balls.

6. Oil your hands, flatten a ball of dough with your hands. Place a ball of the potato filling in center of the dough. Fold the dough into a ball, flatten lightly with your oiled fingers. 
Place the dough to a parchment paper lined baking tray. Flatten them out with the heel of your hand and stretch them into uneven rounds or ovals.
Cover the dough with stretch foil and allow to rise for about 20 minutes.
Repeat with remaining dough and potato filling.

7. Preheat the oven to 180 C / 355 F.

8. Indent the dough with your fingertips. Creating thick lip around the edges.
Beat the egg yolks with oil, brush the top of the dough with the egg wash. Sprinkle some nigella seeds or sesame seeds on top.

9. Bake in preheated oven for about 20 minutes or until browned.

10. Repeat with remaining dough.

If you want them to retain their softness, wrap them in aluminum foil or in a dry towel while still warm.
