Whole-Wheat Grissini Recipe | Episode 537

 Easy to make whole-wheat crunchy grissini recipe. You can make them also without eggs or with only leftover egg yolks/whites. I used 2 leftover egg yolks for the dough and brush them with leftover egg yolk. You can simply use 1 egg yolk/white or use olive oil instead of the eggs.

Ingredients
  • 250g whole-wheat flour
  • 8g baking powder
  • 1,5 tsp salt
  • 125ml cold water
  • 1 egg yolk/white or 2 tbsp olive oil
  • roasted sesame seeds
  • sunflower seeds
  • 1 egg yolk/white or oil for brushing the grissinis
Method

1. Preheat the oven to 180 C / 355 F and line a baking tray with parchment paper.

2. In a medium mixing bowl, stir together the flour, salt, baking powder, water and eggs or oil. Stir until well combined and add more flour if dough is too sticky.

3. Divide dough into 15 to 16 balls and roll each ball out with your hands into a long stroke.
Place on the lined baking tray.

4. Brush top of each stroke with egg, oil or water. Sprinkle with sunflower seeds and roasted sesame seeds.

5. Bake in preheated oven for about 20 minutes or until golden brown. 

Carefully move the grissini to a cooling rack to cool. Once they are cool, store them in an airtight container (for up to 2 to 3 days).
