Turkish Pizza Recipe (Kiymali Pide) | Episode 542

 Turkish flatbread with ground meat and vegetables called Kiymali pide, one of the favorite food of Turkey.

Ingredients

Dough:
  • 100 ml water, lukewarm
  • 7g active dry yeast
  • 1 tbsp granulated sugar
  • 175g all-purpose flour
  • 1 tsp salt
  • 3 tbsp olive oil
  • 1 egg, beaten to brush 
Meat mixture:
  • 150g minced beef
  • 1 small onion
  • 1/2 red bell pepper
  • handful parsley
  • 1 large tomato
  • 1/2 tsp salt
  • 1/4 tsp paprika powder
  • 1/4 tsp black pepper
  • pinch red pepper flakes
Method

1. to make the dough: Stir together the lukewarm water, sugar and dry yeast. Let sit for 5 minutes. Add the flour, salt and oil to the yeast mixture knead until a ball of dough begins to form. (5 to 10 minutes). Oil a bowl and place the dough into the greased bowl. Cover with plastic wrap and a clean kitchen towel. Allow to rise for 1 hour or until doubled in size.

2. To make the meat mixture: In the large bowl of a food processor, fitted with blade, add bell pepper, tomato, onion and parsley. Pulse a few times to chop. Stir together the vegetables with ground beef, salt black pepper, paprika powder and red pepper flakes.

3. Preheat the oven to 220 C / 428 F and line a baking tray with parchment paper.

4. On a lightly floured surface, roll the dough ball into a oval shape of 20 cm x 40 cm (about 8”x16”), with ½ cm (0.2”) thickness.

5. Spread the mixture all over the dough, leaving 2 cm at the edges as a border with no filling (it is easier to spread the filling while the oval flat bread is in the tray).
Fold in the sides to act as border to keep the filling intact. Squeeze the oval dough at each end to make it pointy.

6. Brush the edges of the dough with the beaten egg. Brush the remaining egg on the meat mixture.

7. Bake in preheated oven for about 25 minutes or until golden to deep brown.

8. Cut into slices and serve.
