 Edible bowls from tortillas stuffed with Mexican spiced minced beef, homemade guacamole, beans and sweet corn.

Ingredients

For the bowls
  • 3 small flour tortillas
  • 3 tbsp kidney beans, canned
  • 3 tbsp sweet corn, canned
  • 1 tomato, finely diced
  • cheddar cheese
  • pitted olives and jalapeno peppers, diced

For the guacamole:
  • 1 avocado, ripe, peeled and pitted
  • 1/2 small red onion
  • 1 medium tomato
  • 1 garlic clove
  • 1 tbsp olive oil
  • pinch salt and black pepper
For the minced beef
  • 1 tbsp olive oil
  • 200g minced beef
  • 1 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1,5 tsp paprika powder
  • pinch cayenne pepper
  • pinch chili pepper
  • 1/2 small red onion, diced
  • 1/2 tsp salt
  • 1 tbsp hot sauce, optional
Method

1. To make the guacamole: Pulse the ingredients for the guacamole in a food processor and make it as chunky or smooth as you'd like. Transfer to refrigerator before using.

2. To make the minced beef: Heat the oil in a frying pan over medium heat. Cook the minced beef until tender. Add the spices, salt, diced onion and hot sauce. Cook for another 2 minutes and remove from the heat.

3. To make the bowls: Preheat the oven to 200 C / 390 F and grease the bottom of a cupcake pan. Cradle a tortilla in the center of four of the inverted cups.
Gently press down to form a “bowl” out of the tortilla shell -- make sure the edges are curved upwards. Repeat with the other tortillas. Bake in preheated oven for about 5 minutes or until lightly browned.

4. Once taco bowls are done cooking, fill taco bowls with prepared ground beef, cheddar cheese and then top with kidney beans, corn, tomatoes, guacamole, olives and jalapeno or desired toppings (sour cream, salsa, taco cheese and cilantro are recommended!).
