Turkish Style syrup soaked semolina cake called Revani is simple to make with this recipe.
Revani is one of the most common desserts in Turkey.

Ingredients

For the cake:
  • 3 eggs
  • 150g granulated sugar
  • 8g vanilla sugar
  • 250g yogurt
  • 100ml sunflower oil
  • 160g fine semolina
  • 125g all-purpose flour
  • 16g baking powder
For the syrup:
  • 600ml water
  • 350g granulated sugar
  • juice of 1/2 lemon
Method

1. To make the syrup: Begin by mixing the sugar and water in a medium saucepan. Turn the heat on high and bring the mixture to a boil while continuously stirring it. Once it boils, reduce the heat to low and let the syrup boil gently for about 10 minutes with the cover off. Add the lemon juice toward the end. Turn off the heat and let the syrup cool down.

2. Preheat the oven to 170 C / 340 F and grease a 30x20 cm rectangle cake pan.

3. To make the cake: Beat the eggs, add the sugar and vanilla. Beat for at least 5 minutes. Add the yogurt and oil, stir together with a spatula. 
Then add the semolina, flour and baking powder. Stir until smooth. Pour the cake into the prepared pan and bake for about 30 minutes or until a toothpick inserted in the center comes out clean. Once you remove the pan from the oven, let it rest for about 5 minutes.

4. Pour the cooled sugar syrup over the warm cake and let sit for at least 15 minutes before slicing.

5. Before serving, garnish each square of cake with a pinch of coconut and ground nuts.
