Ingredients
- 125g fine bulgur
- 1 tbsp olive oil
- 1 tsp salt
- 150 ml boiled water
- 250g beetroot, cooked, peeled and pureed
- 1 tbsp pomegranate aroma or balsamic vinegar
- 1 tbsp lemon juice
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 50g beetroot, peeled, cooked and chopped
- handful chopped mint leaves
- handful chopped parsley
- 2 medium cucumber pickles, chopped
Method
1. In a medium mixing bowl, stir together the bulgur, salt and olive oil. Pour half of the boiled water, stir and cover with a kitchen towel. Let sit for about 5 minutes. Add the remaining water and let sit for another 10 minutes.
2. Meanwhile, chop the parsley, mint leaves, pickled cucumbers and beetroot. Set aside.
3. Stir together the pureed beetroot, bulgur, lemon juice, balsamic vinegar, salt, black pepper and red pepper flakes.
4. Add the chopped vegetables and stir until well combined. Chill in refrigerator before serving.
