Zucchini Bread | Episode 417

Ingredients
  • 2 eggs 
  • 1 egg white
  • 200 ml sunflower oil
  • 200 ml yoghurt
  • 1 zucchini, shredded and squeezed
  • 120g corn flour
  • 200g all-purpose flour
  • 1 sachet baking powder
  • 1 tsp salt
  • pinch red pepper flakes
  • handful chopped parsley
  • 100g feta cheese, crumbled
  • 1 egg yolk to brush the top
  • nigella seeds
Instructions

1. Preheat the oven to 200C 400F and grease a baking dish.

2. In a large mixing bowl, stir together the shredded and squeezed zucchini,  Add the chopped parsley, salt and red pepper flakes. Stir in the corn flour, all-purpose flour and baking powder. Add the crumbled feta and stir until well combined.

3. Transfer the mixture to the greased baking dish. Brush top with the egg yolk and sprinkle the nigella seeds on top.

4. Bake in preheated oven for about 40 to 45 minutes. Remove from oven and allow it to cool completely before slicing.
