Super Soft Spinach Flatbread Recipe | Episode 420

INGREDIENTS
  • 250 ml lukewarm milk
  • 1 tbsp granulated sugar
  • 7g active dry yeast
  • 380g whole-wheat flour 
  • 1 tbsp salt
  • 3 tbsp olive oil
  • 100g spinach + 1 tbsp water
Method:

1. In a medium mixing bowl, combine the lukewarm milk, granulated sugar and yeast. Stir and let sit for 5 minutes. In a medium saucepan, heat the spinach and water over medium heat until softened. Drain and allow to cool.
2. Add half of the whole-wheat flour and salt to the yeast mixture. Stir or knead. Add the remaining flour and knead until incorporated and smooth. Stir in the drained spinach and olive oil. Add more flour if needed.
3. Oil a bowl and transfer the dough to the bowl. Cover the bowl and allow to rise for about 45-60 minutes.
4. On a lightly floured surface, divide dough into 10-12 balls. Roll each ball until smooth.
5. Roll each ball out into about 1/8" / 0.3cm thick rounds.
6. Heat a skillet over medium heat or lower. Place one flatbread in the pan, cook around the 1/2 to 1 minute. It should bubble up then flip and cook the other side. Repeat with remaining flatbreads.
