Ingredients

For the dough
  • 300g all-purpose flour
  • 200ml lukewarm water
  • 7g dry yeast
  • 1 tbsp granulated sugar
  • 1 tsp garlic powder
  • 1,5 tsp salt
  • pinch black pepper
  • 1 tsp dried oregano
  • 3 tbsp olive oil
For the filling and top
  • 3 tbsp tomato paste
  • 1 tbsp water
  • 1 tbsp olive oil
  • pitted black olives
  • grated cheese, about 80g
Instructions

1. In a medium mixing bowl, combine the all-purpose flour, salt, black pepper, dried oregano, and garlic powder. Set aside.

2. In a small bowl, stir together the lukewarm water, granulated sugar, and dry yeast. Let sit for about 5 minutes.

3. Stir together the flour mixture and yeast mixture. Add the olive oil. Knead to an elastic ball of dough. Add more flour if needed. Cover the bowl with a clean kitchen towel and allow to rise for at least 45 minutes. 

4. Preheat the oven to 220C / 430F.

5. Stir together the tomato paste with water and olive oil. On a lightly floured surface, roll the dough out into a rectangle. Brush with the tomato paste. Top with the pitted olives and grated cheese. Starting with a long side, roll the dough up tightly and pinch the seams and ends to seal. Coil the rope into a round spiral, turban style. Place on a greased baking pan or oven-proof skillet. Brush top with remaining tomato paste, top with more grated cheese. Bake in preheated oven for about 55 minutes.
