White Chocolate Dipped Chewy Gingerbread Cookies


Serves: 16 cookies - Prep time: 20 minutes - Baking time: 10 minutes - Total time: 30 minutes


  • 110 g butter, softened
  • 75 g light brown sugar
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 150 g all purpose flour
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
You will also need:
  • 100 g white chocolate, melted
  • dried cranberries or your favorite sprinkles, optional

1. Preheat the oven to 190C(374F) and line a baking tray with parchment paper.

2. In a medium mixing bowl, cream the butter, sugar, vanilla extract, salt and egg yolk. Stir in half of the flour and spices, stir until well combined. Add the remaining flour and knead until  smooth ball of dough begins to form.

3. Roll dough into 16 equal size balls. Place each ball on lined baking tray and flatten lightly with your fingers.

4. Bake in preheated oven for about 10 to 12 minutes or until golden brown.
Remove from oven, allow to cool for about 10 minutes.

5. Dip each cookie in melted chocolate and decorate with dried cranberries or your favorite sprinkles.
