Dutch Ginger Biscuits (Pepernoten)

Serves: 20 mini biscuits - Prep time: 15 minutes - Cooking time: 15 minutes - Total time: 30 minutes
Ingredients
- 125 g all purpose flour or spelt flour
- 1 tsp baking powder
- pinch salt
- 125 g honey
- 1 tsp anise powder
- 2,5 tsp cinnamon powder
- 1/3 tsp ginger
- 1/4 tsp coriander
You will also need:
- 1 tbsp flour
- cup of water, to wet your hands
Instructions
1. Preheat the oven to 160C(320F) and line a baking sheet with parchment paper.
2. In a medium mixing bowl, combine the flour, baking powder, salt and spices. Stir in the honey and knead for about 5 minutes. (it's a dry dough likes crumble dough)+
3. Wet your hands, Roll dough into balls and press edges to form a dice shape. Coat lightly in flour and place on lined baking sheet. Repeat with remaining dough.
4. Bake in preheated oven for max 15 minutes.
