Summer Pasta Salad Recipe - Chicken and Vegetables


Servings: 3  Prep time: 5 minutes  Cooking time: 10 minutes 
Chill time: 15 minutes  Total time: 30 minutes


  • 250 gr tri-color pasta
  • 1 bell pepper, chopped
  • pickles, chopped
  • 2 tbsp sweet corn
  • 1 chicken breast, cooked and sliced in strips
  • handful green beans, trimmed and halved

  • 2 tbsp light mayonnaise or yogurt
  • 2 tbsp vegetable oil
  • pinch white pepper
  • 1/2 tsp ground black pepper
  • 1/3 tsp garlic powder
  • 1/2 tsp salt


1. Bring a large pot of lightly salted water to a boil. Add halved green beans and chopped bell peppers and cook for about 5 minutes. Add the pasta and cook for another 8-10 minutes, until al dente. Drain, and rinse with cold water.

2. In a large mixing bowl, combine the mayonnaise, vegetable oil, spices and salt. Add the pickles, chicken, pasta, green beans and bell peppers. stir until well combined. Add more salt if desired.

3. Chill in refrigerator for at least 15 minutes.
