Ice Cream Cookie Sandwiches

  • 450 gr vanilla ice cream, slightly melted

for the cookie dough

  • 125 gr all purpose flour
  • 100 gr light brown sugar
  • 50 gr granulated sugar
  • pinch salt
  • 1/2 tsp baking soda
  • 1 egg
  • 75 gr butter, melted
  • 1 tsp vanilla extract
  • 80 gr chocolate chips


1. Preheat your oven to 160C(325F) and line a baking dish with parchment paper.

2. In a medium mixing bowl, combine the ingredients for the cookie dough. Stir until well combined. Spread onto the lined dish. Bake in preheated oven for about 15 minutes or until golden brown. Remove from oven. Cool to room temperature. Cut into 6 pieces.

3. Line another baking dish with parchment paper. Spread softened ice cream into a baking dish lined with parchment paper. Smooth out to about 1-inch thick. Freeze until solid. Remove form freezer. Cuth into 6 pieces.

4. Take a rectangle of ice cream and sandwich one end between two cookies. Freeze until solid.
