Pretzel Crusted Chicken Bites With Homemade Black Pepper Mayonnaise



1 Skinless, boneless chicken breast, cubed
ground black pepper
1 egg + 1 egg white, beaten
100 gr pretzels, crushed

For the mayonnaise:
1 egg yolk
1 tsp yellow mustard
1/2 tbsp lemon juice
55 ml vegetable oil
1/4 tbsp ground black pepper


1. Preheat your oven to 200 C - 392 F and line a baking tray with parchment paper.

2. Season the cubed chicken breast with salt and ground black pepper. Dip the cubed chicken breast first in egg wash, then coat with crushed pretzels. Place on lined baking tray.

3. Bake in preheated oven for about 15 to 20 minutes. 

4. Meanwhile make the black pepper mayonnaise: In a medium bowl, whisk the egg yolk and mustard, stir in the lemon juice. Add the oil very slow thin stream, whisking constantly, until mayonnaise is thick, about 8 minutes. Add ground black pepper and stir until combined. Chill in refrigerator before serving.
