How to Make Homemade Flatbread - Super Soft Bead


makes 1 flatbread

500 gr spelt flour or all purpose flour
1,5 tsp salt
50 ml warm water
2 tsp dry yeast
1 tsp sugar
320 ml lukewarm water
60 ml olive oil
sesame seeds
nigella seeds


1. Disolve 50 ml warm water, dry yeast and sugar. Let sit for 5 minutes.

2. In a large mixing bowl, combine the flour, salt, 320 ml lukewarm water and olive oil. Add disolved yeast and knead until a sticky(!) dough. Transfer to a flour dusted bowl, cover with plastic wrap and let sit for 45 minutes or doubled in size.

3. Line a baking sheet with parchment paper. On a lightly floured surface, knead the dough 2-3 minutes more. Transfer to lined sheet and flatten lightly with your hands. Sprinkle with sesame seeds and nigella seeds. Cover and let sit 10 minutes more.

4. Preheat yor oven to 220C(428F). Bake the flatbread for about 20 minutes. Remove from oven. Dust top lightly with water to soften. Wrap with a clean kitchen towel before serving.
