Mother's Day Dessert




3 eggs
100 gr granulated sugar
1 tsp vanilla extract
300 ml milk
150 ml vegetable oil
200 gr all purpose flour
1 sachet baking powder
1 tbsp cocoa powder


300 ml whipping cream
5 berries, mashed
1 tbsp jam, optional
1 tbsp coconut


2 tbsp coconut


1. Make the cake: Preheat your oven to 175C(347F) and grease a 35cm cake pan or 2 small cake pan with oil. 

2. In a mixing bowl, whisk the eggs and sugar until creamy. Stir in the milk, oil and vanilla. Add the flour, cocoa powder and baking powder. Whisk until combined. Pour into the greased pan. Bake in preheated oven for about 20 to 25 minutes. Remov eform oven and let it cool for 15 minutes. Use a round cup, cut the cak einto round shapes. 

3. Make the cream: Stir together the whipping cream, mashed berries, coconut and jam until combined. 

4. Roast the coconut in a skillet until golden brown.

5. Top the cakes with a layer of the whipping cream mixture. Sprinkle with roasted coconut. Chill in refrigerator to set for 2 hours or overnight.
