Turkish Stuffed Potatoes (KUMPIR)
10:474 medium potatoes
1 cup of canned vegetables(carrots, peas, corn)
1/2 cup of sliced pickles
handful sliced olives
1 tbsp butter
1 cup shredded cheese
1 tbsp mayonnaise
salt and pepper
Instructions
1. Bake the potatoes: For microwave: Pierce the potato with a knife in several places Cover with stretch foil and bake in the microwave till it is soft and tender. The time depends on the size of the potato, generally it takes about 10-15 minutes. For oven: Pierce the potato with a knife in several places and bake in the oven at 425 F (220 C), till it is soft and tender. The time depends on the size, generally it takes about 40-50 minutes.
2. When it is ready, cut the baked potato lengthwise in half, scoop the flesh out of the potatoes. Mash with cheese, butter, salt and pepper. Add the mayonnaise stir until smooth. Add the vegetables, pickles and olives stir until combined. Stuff into the skins. Microwave for another 2 minutes of place in oven for about 5 to 8 minutes.
3. Serve with your favorite sauce on top.
