Banana Bread Cream Cheese Muffins


12 servings

For the muffin batter:
1 egg
110 gr butter, softened
150 gr light brown sugar
65 gr Greek yogurt
1 tsp vanilla extract
2 ripe bananas
1/2 tsp baking soda
1/2 tsp bakin powder
130 gr spelt flour or all purpose flour

For the cream cheese filling:
115 gr cream cheese, softened
1 egg
50 gr granulated sugar or light brown sugar
3 tbsp all purpose flour

1 tbsp jam


1. Preheat your oven to 180C(350F) and line 12 muffin cups with paper liners. Set aside.

2. In a mixing bowl, whisk together the softened butter, egg and sugar. Stir in the yogurt and vanilla extract. Add the bananas and mash together. Add flour, baking soda and baking powder mix lightly to sombine. Set aside.

3. In a mixing bowl, combine the cream cheese, egg and sugar until creamy. Add flour and stir until combined.

4. To assemble the muffins, spoon a layer of muffin batter into the lined muffin cups. Then spoon a layer of cream cheese filling, then 1 tsp of jam onto each cream cheese fillin. Top with another layer of muffin batter.

5. Bake for 20 to 25 minutes. Muffins are done when a tooth pick inserted in the center comes out clean. Allow muffins to cool for 20 minutes.
