Veggie Croquettes



1 1/2 cups of mashed potatoes
50 gr shredded cheese
1 tbsp butter
1 cup of canned vegetables, (corn, peas, carrots)
ground black pepper

1 egg, beaten
flour for dredging
breadcrumbs for coating
oil for frying


1. In a large bowl, mix the mashed potatoes, shredded cheese and butter. Season with salt and pepper. Add the vegetables stir until well combined. Chill the mixture for a few minutes.

2. Shape it into 2 inch log or sausage shapes. Roll each croquette in flour, egg and breadcrumbs.

3. Deep fry them until golden brown in a skillet or bake in a preheated oven 220 C - 428 F for 20 to 25 minutes until golden brown. (turning them at the halfway point)
