Healthy Banana Muffins


Flourless sugar free breakfast muffins 

Serves 12 muffins

1 large banana, mashed
2 eggs
125 ml (soy) milk 
140 gr oats
1 sachet baking powder
1/2 tbsp cocoa powder
1/2 tbsp walnuts, chopped
1/2 apple, grated
(1 tbsp honey or another sweetener, optional for sweet lovers)

100 ml whipping cream for top

12 muffin liners


1. Preheat your oven to 175 C - 350 F and line 12 muffin cups with paper liners.
2. In a mixing bowl, combine the mashed banana and eggs. Stir in the milk. Add oats, baking powder, cocoa powder, grated apple and walnuts. Stir until combined.
3. Scoop the mixture into the paper liners. Bake for about 20 to 25 minutes.
4. Remove from oven allow to cool. Serve with whipping cream on top.

*You can add dried fruit, coconut and more ingredients.
