Turkish Sesame Bread (Simit)

Ingredients
makes 4

10 gr fresh yeast
1 tbsp granulated sugar
110 ml water, lukewarm
3 tbsp vegetable oil
1,5 tsp salt
250 gr all purpose flour

large water to coat
large plate unroasted sesame seeds to coat


Instructions

1. In a large mixing bowl, disolve yeast, water, oil, sugar, salt and half of the flour. Cover and let sit for 10 minutes. Add the remaining flour and knead. Turn out dough onto a lightly floured work surface and knead for 10 minutes or until dough is smooth and elastic. Shape dough into a ball, then place in a large greased bowl and turn to coat. Cover bowl and let rise for 10 minutes.

2. Punch down dough on a work surface and divide into 4 equal portions. Roll out each portion into a 15 cm long rope. Cover and let rise for 10 minutes. 

3. After 10 minutes: Oil a surface lightly with oil. Roll each rope out into 80 to 100 cm thin ropes. Fold rope in half until ends align, then lift off work surface and use your hands to twist dough to form a two-stranded rope. Return twist to work surface and join ends together to form a circle, pressing ends firmly to seal. Repeat with the remaining dough to make 4 twisted rings. 

4. Line a baking sheet with parchment paper. Dip each ring into water to coat, allow excess to drain off, then dip into sesame seeds, turning to  coat. Transfer rings to prepared oven tray, cover and set aside in a warm place for 30 minutes.

5. Preheat your oven to 250 C - 480 F

6. Bake the sesame breads in preheated oven deep brown for about 8 to 9 minutes.
