Custard Scones


makes 8


240 ml yogurt
1 egg 
100 ml vegetable oil
350 gr all purpose flour
1 sachet baking powder
1/2 teaspoon salt
1 tsp vanilla extract


2 eggs
50 gr granulated sugar
1 tbsp lemon juice
125 ml sour cream or whipping cream
1 tsp vanilla etract

icing sugar


1. In a large bowl, combine the ingredients for the dough and knead until an elastic dough begins to form.

2. Line a baking sheet with parchment paper. Roll dough into 8 equal size balls. Place on lined sheet. Press down the middle lightly to form a 'bowl'. 

3. Make the custard: In a small bowl, whisk 2 eggs, sugar and vanilla extract until fluffy. Whisk in the lemon juice and sour cream unil smooth.

4. Preheat your oven to 190 C - 375 F.

5. Fill 1 tbsp custard into the hole of each dough. Add 1 tsp jam on top. Brush the sides with the remaining custard.

6. Bake in preheated oven for about 20 to 25 minutes or until golden brown. 

7. Remove from heat and top with icing sugar.
