Starbucks Snowball Muffin Recipe


Snowball muffins

Makes: 6

For the muffins:

80 gr butter, softened
65 gr granulated sugar
2 eggs
1 tsp vanilla extract
80 gr self rising flour
2 tbsp cocoa powder

Frosting and filling:

200 ml whipping cream
50 gr cream cheese
1 tsp vanilla extract
1 tbsp confectioners sugar



1. Preheat your oven to 175c/350f and line 6 muffins cups with paper lines.

2. In a large mixing bowl, beat softened butter and sugar until creamy. Beat in 2 eggs one at a time. Add vanilla extract, flour and cocoa powder. Beat until completely incorporated.

3. Full each muffin cup full of batter.

4. Bake in preheated oven for about 15 to 20 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

5. Make the frosting: in a medium bowl, beat together whipping cream, vanilla extract, cream cheese and powdered sugar. 

6. Fill a pastry bag with a small tip with half of the frosting. Gently push a tip into the center of your cupcake, rotate the tip slightly and pull the tip out of the cupcake.Push the small cake round out of the tip and repeat this process with all the cupcakes. Be sure not to go all the way down to the bottom of the cupcake, this can cause your filling to seep through the liner. Pipe in your favorite filling and top with the piece of cake.

7. Top with the remaining frosting. Sprinkle the top with coconut.
