Shortbread Marshmallow Sandwiches


Shortbread marshamallow cookies sandwich

makes 30 cookies

225 gr butter, softened
113 gr light brown sugar
1/2 tsp salt
380 gr all purpose flour
30 marshmallows
400 gr melted dark chocolate


1.Preheat oven to 175c/350f and line a baking sheet with parchment paper.
2.Make the dough: In a large bowl, beat softened cream butter. brown sugar, cream 2-3 minutes on medium speed. Add flour and salt knead it with your hands.
3.Roll dough into balls flatten lightly with your hands and place it on baking sheet.
4.Bake the cookies until light brown about 10 minutes.
5.Remove from oven and place marshmallows on top of the cookies.
place back in oven for about 2-3 minutes.
6.Allow to cool on baking tray 10-15 minutes.
7.Dip in melted chocolate, place on tray for about 10 minutes until chocolate set.
8. Place on parchment paper lined plate and place in refrigerator for about 10 minutes. Serve at room temperature.
