Shortbread Chip Cookies


Shortbread chip cookies recipe

makes 40 mini cookies

225 gr butter, softened
113 gr light brown sugar
1/2 tsp salt
380 gr all purpose flour
75 gr dark chocolate chips
+50 gr extra chocolate chips for the top


1.Preheat oven to 175c/350f and line a baking sheet with parchment paper.
2.Make the dough: In a large bowl, beat softened cream butter. brown sugar, cream 2-3 minutes on medium speed. Add flour and salt knead it with your hands.
Add 75 gr chocolate chips and knead until combined.
3.Roll dough into balls flatten lightly with your hands and place it on baking sheet.
Place choco chip on the top of the cookies.
4.Bake the cookies until golden brown about 15-18 minutes.
