Almond Croissants


Almond croissants recipe

makes 8

8 large croissants, cut in half horizontally
5 tbsp butter, softened
80 gr granulated sugar
pinch of salt
1/2 tsp vanilla extract
1/2 tsp rum
2 tbsp almond flour
sliced almonds
confectioners sugar


Preheat oven to 200c/390f and line a baking sheet with parchment paper.

1. To make the filling: In a large bowl, cream together the butter, sugar, and pinch of salt. Add vanilla, rum and almond flour using a handheld electric whisk, whisk for a few minutes or until the mixture becomes thick and takes on a consistency similar to a mousse. 

2. Spread a bit of the filling on the bottom cut side of the croissant, put the top on, spread a little more on top, sprinkle with some almonds and place on a paper towel lined baking sheet. Continue with the remaining croissants, then bake them for about 8-10 minutes.

3. Sprinkle over some confectioners sugar.
