Ingredients
Dough:
- 120 ml yogurt
- 1 egg
- 50 ml oil
- 1 tbsp granulated sugar
- 1 tsp vanilla extract
- pinch salt
- 8g baking powder
- 275g all-purpose flour
Filling:
- 100g unsalted butter, melted
- 100g light brown sugar
- 1 tbsp cinnamon powder
- handful pecans, chopped
- 2 tbsp butter, melted
Icing:
- 100g unsalted butter, softened
- 200g cream cheese
- 250g confectioners sugar
- 1 tsp vanilla extract
Method:
1. Preheat the oven to 180 C / 355 F.
2. To make the dough: In a medium bowl, combine the yogurt, egg, vanilla and oil. Add the flour, baking powder, salt and sugar. Stir until well combined and smooth.
3. Lightly flour the surface and both sides of the dough. Roll the dough out into a 11 x 11 inch rectangle. Brush the dough with the melted butter. Stir together the cinnamon and light brown sugar. Sprinkle the dough with the cinnamon sugar and the chopped pecans.
4. Staring from one of the small ends, tightly roll the dough. Cut into 9 or 12 slices and place them cut side down in a well buttered baking pan. Brush them with the remaining melted butter.
5. Bake in the preheated oven for about 15 to 18 minutes.
6. To make the icing: Beat the butter, cream cheese and vanilla. Add the confectioners sugar and beat for 2-3 minutes more or until well mixed.
7. Remove the cinnamon rolls from the oven and allow to cool for 5 minutes. Drizzle the cinnamon rolls with the icing.
