 Buttermilk fried crispy chicken with spicy mayonnaise.

Ingredients

For the chicken marinade:
  • 200 ml buttermilk
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp red paprika powder
  • 1 tsp salt
  • 1 tbsp hot sauce
  • 2 boneless skinless chicken breasts
For breading:
  • 160g all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp red paprika powder
  • 3 tbsp of the buttermilk mixture
For the spicy mayonnaise:
  • 4 tbsp mayonnaise
  • 1/2 tbsp hot sauce
  • 1 tsp red paprika powder
  • 1/2 tsp black pepper
  • pinch garlic powder
  • pinch onion powder
To assemble:

Method

1. Cut each chicken breast in half crosswise to make 2 small pieces of chicken. In a large bowl, stir together the buttermilk, salt, hot sauce and spices. Add the chicken to the mix and place in the fridge to marinate up to 24 hours or at least 1 hour.

2. Heat the oil in a skillet or pot over medium heat. 

3. In a medium bowl, whisk the flour, salt and spices. Drizzle 3 tablespoons of the buttermilk batter into the flour mixture and mix it through with a fork. Working with 1 piece at a time, dredge chicken the flour mixture and press flour on the top chicken to form a thick crust. 

4. Transfer chicken to hot oil and fry for 3-5 minutes per side or until the outside is crispy and golden. 

5. Melt the butter in a large saucepan and toast buns face down until golden and crisp.

6. To make the spicy mayo: Stir together the mayo, hot sauce and spices.

7. Spread a generous layer of mayo on each bun. Top with pickles,chicken cheddar, lettuce and more sauce.
