 Chewy browned butter blondies with pecan nuts and white chocolate chunks.

Ingredients
  • 100g unsalted butter
  • 250g white chocolate chunks
  • 2 eggs
  • 125g light brown sugar
  • 1 tsp vanilla extract
  • pinch salt
  • 135g all-purpose flour
  • 16g baking powder
  • 50g white chocolate chunks 
  • 50g pecans
Method

1.Preheat the oven to 160 C / 320 F. Grease and line a brownie tin with parchment paper.

2. Melt in a small saucepan over medium-high heat, then continue cooking, swirling the pan occasionally — at first, it will simmer and look foamy, then the foam will subside and the solids at the bottom will begin to brown, 4-5 minutes total.

3. In a medium mixing bowl, stir together the browned butter and white chocolate until the chocolate is melted. Add the light brown sugar, eggs and vanilla to the butter mixture and stir until incorporated. Then add the salt, flour and baking powder, stir the mixture until well mixed. 
Stir in the chocolate chunks.

4. Scrape the thick batter into the prepared pan and spread into an even layer. Top with pecan nuts.

5. Bake until the edges are browned and the top is crackled and shiny, 33-35 minutes.

6. Cool the blondies in the pan for 10 minutes. Then just slip the slab of blondies out of the baking pan using the parchment paper sling, cut them on the parchment.

*Leftovers keep well wrapped or in an airtight container for 4 days.
