Mexican Tortilla Lasagna Recipe | Episode 523

 Mexican lasagna, this dish is layered with corn tortillas, 
ground beef, beans, sweet corn and spices.

Ingredients
  • 3 tbsp oil
  • 300g minced beef
  • 500g canned tomatoes
  • 1 tsp tomato paste
  • 1 tbsp hot sauce
  • 200g sweet corn
  • 225g canned kidney beans
  • 4 corn tortillas
  • 100g grated cheese
  • 100g grated cheddar
Spices:
  • 1,5 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp chilli pepper
  • 1/2 tsp curry 
  • pinch cumin
Method

1. Heat the oil in a large sauté pan on medium high heat. Add the ground meat, breaking it up as you add it and cook until browned.
Add the spices and salt, sauté for 2 minutes more.
2. Add the canned tomatoes, hot sauce and tomato paste to the minced beef, sauté for another 2-3 minutes. 
Then add the canned kidney beans and corn, stir together and remove from the heat.
3. Preheat the oven to 200 C / 390 F.
4. Spread a scoop of the sauce over the bottom of a dish and top with a tortilla. 
Repeat layering tortillas, sauce and cheese. 
End with a tortilla on the top and sprinkle remaining cheese on top.
5. Bake in preheated oven for about 20 minutes or until the cheese is completely melted and bubbling.
6. Cool and serve: Let the casserole stand for 10-15 minutes before serving. 
Serve with sour cream, chopped avocado.
