Lemon Cookies


Serves: 20 cookies - Prep time: 10 minutes - Baking time: 10 minutes -
Total time: 20 minutes


  • 80 g butter, softened
  • 100 g granulated sugar
  • 1 egg
  • 2 tbsp lemon juice
  • 240 g all purpose flour
  • 1 1/2 tsp baking powder
  • pinch salt
You will also need:
  • powdered sugar
  • granulated sugar


1. Preheat the oven to180C(356F) and line a baking sheet with parchment paper.

2. In a medium mixing bowl, stir together the butter and egg with a fork until fluffy. Stir in the sugar and lemon juice. Slowly add in the dry ingredients and mix just until combined. The cookie dough will be sticky.

3. Roll dough into balls (about 1 tablespoon each ball).
Roll each ball in granulated sugar first and then in the powdered sugar.

4. Place the lemon crinkle cookies on a baking tray lined with parchment paper and bake for 8/10 minutes.

5. Allow the lemon crinkle cookies to cool for 5 minutes on the baking sheet, then transfer to a cooling rack to cool completely. Serve with icing sugar on top.
