Beef Stuffed Zucchini Recipe


Servings: 4 - Prep time: 10 minutes - Cooking time: 20 minutes - Total time: 30 minutes


  • 4 medium zucchini
  • 450 gr ground beef
  • 1/2 onion, chopped
  • 1 garlic clove, cutted
  • ground black pepper 
  • salt
  • 1/4 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp ginger
  • 1/4 tsp turmeric
  • 1/3 tsp cayenne pepper


1. Preheat the oven to 220C(428F) and grease a bakind dish with olive oil.

2. In a medium mixing bowl, combine the ground beef, chopped onion, garlic, salt, pepper and spices. Stir until well combined.

3. Cut zucchini in half lengthwise; cut a thin slice from the bottom of each with a sharp knife to allow zucchini to sit flat. Scoop out pulp, leaving 1/4-in. shells. Place shells in the greased pan. Stuff each shell with ground beef mixture. 

4. Bake in preheated oven for about 15 to 20 minutes. Or until cooked trough.
Season with salt and ground black pepper.
