Sweet meringue kisses recipe

makes 30 meringue kisses

2 egg whites
pinch salt
100 gr sugar
red food coloring
1/2 tsp peppermint extract, optional


1. Preheat oven to 100c / 200f. Line a baking sheet with parchment paper.

2. In a large bowl, beat the egg whites with a pinch salt use an electric mixer or electric hand beaters to whisk the egg whites until soft peaks form.

3.Add the sugar, a spoonful at a time, whisking until just combined.
After the last of the sugar has been, added, continue to whisk for a further 2-3 minutes or until the mixture is very thick and glossy, all the sugar has dissolved and a long trailing peak forms when the
whisk is lifted. Add peppermint extract and stir with spatula.
The best way to test if all the sugar has dissolved is to rub a little of the mixture between your thumb and forefinger.

4. You can leave your meringues marshmallowy white, you can flavor them and color them, too.
For stripes of color, turn a piping bag inside out and brush on stripes of food coloring.
Carefully turn it back and fill with meringue. Use piping bag with round tip; 1/2 inch (1.25 cm). 

5. Pipe little kisses on lined baking tray and place in preheated oven for 80 minutes.
