English Muffins Recipe


English muffin recipe

Makes: 12 muffins

245 ml milk, warm
7 gr dry yeast + 1 tsp sugar
1 egg 
3 tbsp butter, melted
1 tsp of salt
1 tsp baking soda
400 gr all purpose flour


1. Add the yeast and 1 tsp sugar to the warm milk, stir and allow it to sit and foam for 5 minutes.

2. In a large bowl, combine the yeast mixture, egg, salt, sugar, baking soda, melted butter and flour. Knead until elastic dough. Add more flour of dough is to sticky.

3. Oil a medium bowl, place the dough into the oiled bowl and brush top of dough with oil.
 Cover with plastic wrap and allow iT to rise for 2 hours.

4. Sprinkle a baking sheet with cornmeal; set aside.

5. On a floured surface; knead dough together. Cut into 12 equal pieces. Roll each piece into a ball, press them down with your hand and place on baking sheet. Cover and allow to rise for about 1 hour.

6. Preheat oven to 160c/325f 

7. Place each round onto a warm griddle over medium heat and cook both sides until golden brown. Place them back onto baking sheet and bake for 10 minutes in preheated oven.
