Dutch Egg Biscuits ''eierkoeken''


Those egg biscuits ''eierkoeken'' are very popular in the Netherlands.

The egg cakes are soft and delicious. You can add raisins or chocolate chips to the batter.


2 eggs
100 gram sugar
1 lemon zest grated
1 teaspoon baking powder
100 gram all purpose flour

Chocolate cups, raisins or another ingredients of desired, optional

oven: preheat 180 c ( 350 f )
bakingtime: untill goldenbrown


1. Preheat the oven to 180 c/350 f Line a baking tray with parchment paper

2. In a large bowl, beat the eggs and sugar on medium speed

until creamy, add the lemon zest, flour and baking powder stir together with a spatula. 

3. Scoop with a spoon a lot of the batter onto the lined sheet. Spread the batter round with the back of the spoon 

4. Bake the biscuits in the preheated oven golden brown. For about 10 minutes.
