Turkish Beef Hand Pies (Pogaca) - Ep. 313

INGREDIENTS

  • 110 ml water, lukewarm
  • 7 g dry yeast
  • 1 tsp white sugar
  • 375 g all purpose four
  • 1 egg
  • 2 tbsp mayonnaise
  • 1 tsp salt
  • 50 ml sunflower oil
  • 1/2 tsp turmeric
  • 1 egg, beaten for top
Filling:
  • 200 g ground beef
  • 1 tbsp sunflower oil
  • 1 onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red paper flakes
  • 1/4 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp turmeric
  • 1 tsp tomato paste




INSTRUCTIONS

1. In a small cup, combine the warm water, sugar and yeast. Stir and let sit for 5 minutes.
2. In a medium mixing bowl, combine the flour, disolved yeast, mayonnaise, egg, turmeric, salt and oil. Stir in the disolved yeast. 
Knead until a smooth ball of dough begins to form. Add more dough if dough is too sticky.
Place dough in a oiled bowl. Cover and let sit for about 60 minutes or until doubled in size.
3. Meanwhile, in a skillet heat the sunflower oil. Add the chopped onion and bell pepper. Saute for about 2-3 minutes. Add the minced beef. Stir the beef occasionally to make sure it's browning evenly. Add the salt, spices and tomato paste. Cook for another 2-3 minutes. Set aside.
4. Preheat the oven to 200C  392F and line a baking sheet with parchment paper.
5. Roll dough in 12 equal size balls. Lighty flour the surface and flatten each ball of dough with your hands. Put a small amount of the filling in the center. Fold the circle in half over the filling so the edges come together and pinch them closed very gently. Place on lined baking sheet. 
6. Brush top with egg wash and bake in preheated oven for about 20 to 30 minutes or until golden brown.
