Almond Kavala Cookies


Serve: 28 Cookies - Prep time: 20 minutes - Cook time: 12 minutes - Total time: 32 minutes


  • 30 g vanilla sugar
  • 130 g butter, softened
  • 145 g All purpose flour
  • 70 g raw almonds, ground
  • 1 vanilla bean, scraped
You will also need:
  • 30 g powdered sugar
  • 30 g vanilla sugar


1. Preheat the oven to 170C(340F) and line a baking sheet with parchment paper.

2. In a medium mixing bowl, cream the butter, 30 g vanilla sugar and vanilla scraped vanilla bean. Add the ground raw almonds and flour. Knead until a smooth and sticky ball of dough begins to form.

3. On a lightly floured surface, roll dough into equal size balls(about 1/2 tablespoon).
And shape into  half moons. Place on lined baking sheet.

4. Bake in preheated oven for about 10-15 minutes or until golden brown. Remove form heat and allow to cool for about 10 minutes.

5. In a small bowl, stir together the powdered sugar and vanilla sugar. Coat the cooled cookies with the sugar mixture and place back on baking sheet to cool completely.
