Cheese Soufflé


Cheese souffle

Serves 4 soufflés 

50 grams butter
50 grams all purpose flour 
300 ml whole milk
125 grams old cheese, grated
Pinch salt and pepper 
30 grams fresh or dried chives 
4 egg yolks 
4 egg whites
Pinch salt

Brush the pan with
10 grams butter, melted
1 tablespoon flour

Oven: preheated 190 c / 375 f
Baking time: 15 - 20 minutes


1. Preheat the oven to 190 c / 375 f Brush the soufflé pans with the melted butter and sprinkle with a little bit flour. Set aside.

2. In a medium saucepan with thick bottom, melt the butter, add the flour stirring. Boil for 2 minutes over medium heat. Stir in the milk. Boil the mixture for 5 minutes on low heat. Stir occasionally.

3. Add the egg yolks one at a time. 

4. Add the the cheese, peppers, saltand chives to the mixture, stir until incorporated.

5. The egg whites: Add a pinch of salt to the egg whites and whisk on medium speed until a thick mixture. Add this to the another mixture in 3 parts, stir together.

6. Place the soufflés on a baking tray and bake it in the preheated oven for about 15 to 20 minutes.
