Ingredients

Cake
  • 170g unsalted butter, softened
  • 150g light brown sugar
  • 3 eggs
  • 120g yogurt
  • 200g all-purpose flour
  • 120g cocoa powder
  • 1 tsp baking soda
  • 180ml coffee
  • 150ml extra coffee
Dalgona frosting
  • 2 tbsp instant coffee
  • 1 tbsp granulated sugar
  • 1 tbsp warm water
  • 1 tbsp heavy cream
  • 2 tbsp mascarpone or monchou
  • 1 tbsp confectioners sugar
  • Dark chocolate for decorating
Method

1. Preheat the oven to 180 C / 355 F and grease a 12 cm springform.

2. To make the cake: In a large mixing bowl, cream the butter and sugar. Beat in the eggs and yogurt. Add the all-purpose flour, cocoa powder and baking soda, beat until well combined. Mix in the 180ml coffee and beat until smooth.

3. Pour the batter into the greased springform and bake in preheated oven for about 45 to 50 minutes.

4. To make the dalgona frosting: In a small bowl, beat the instant coffee, granulated sugar and warm water for about 3 minutes or until thickened. Add the heavy cream, mascarpone and confectioners sugar, mix until well combined. Transfer the frosting to the refrigerator to set.

5. Remove the cake from the oven and allow to cool for 5 minutes before removing from the pan. Remove the cake from the pan and allow to cool for 15 minutes.

6. Pour the remaining 150 ml coffee all over the cake and spread the frosting over the cake. Decorate with grated dark chocolate on top.
